Red Lentils, drysoakedCup28

Salt, to tasteTbsp4 1/2
Soak Lentils overnight or 4 hours. Wash, rinse and drain lentils.
In a large soup pot heat oil on medium heat.
Add cumin seeds, Fenugreek and mustard seeds and fry till mustard seeds pop.
Add onions, ginger, garlic and saute till it is transcluscent.
Add garlic, basil and salt. 
Add lentils, diced tomatoes, water, red chilli flakes.
Add remaining spices.
Bring to a boil and simmer till lentil is soft.
