Advance Prep
Cook potatoes till soft in boiling water. Peel and mash. 
Add Margarine, 2 Tbsp of salt and pepper.
Wash and Drain Lentils and soak under water. Add garlic cloves and 10 Tbsp salt to the water.
Soak lentils overnight.
Prep
Cook lentils for 30-40 min until slightly mushy.
Drain and pick out garlic. Drizzle with olive oil , add pepper and coat evenly.
In a second pan add second cup of oil and garlic ; cook till garlic is brown.
Add onion and half the zuccini and cook till well browned.
Preheat oven to 475
Add remaining zuccini and saute for 5 min.
Add bok choy and cover, reduce heat and cook 3-5 min.
Remove from heat and season with salt and pepper to taste.
Mix lentil and cooked vegetables and transfer to baking trays.
Layer mashed potatoes over lentis, bake for 15-20 min.
