Green Lentils (dry) | cup | 25 | |||

Margarine | cups | 2 | |||
Advance Prep | |||||
Cook potatoes till soft in boiling water. Peel and mash. | |||||
Add Margarine, 2 Tbsp of salt and pepper. | |||||
Wash and Drain Lentils and soak under water. Add garlic cloves and 10 Tbsp salt to the water. | |||||
Soak lentils overnight. | |||||
Prep | |||||
Cook lentils for 30-40 min until slightly mushy. | |||||
Drain and pick out garlic. Drizzle with olive oil , add pepper and coat evenly. | |||||
In a second pan add second cup of oil and garlic ; cook till garlic is brown. | |||||
Add onion and half the zuccini and cook till well browned. | |||||
Preheat oven to 475◦ | |||||
Add remaining zuccini and saute for 5 min. | |||||
Add bok choy and cover, reduce heat and cook 3-5 min. | |||||
Remove from heat and season with salt and pepper to taste. | |||||
Mix lentil and cooked vegetables and transfer to baking trays. | |||||
Layer mashed potatoes over lentis, bake for 15-20 min. |
