| Advance Prep | |||||
| Cook potatoes till soft in boiling water. Peel and mash. | |||||
| Add Margarine, 2 Tbsp of salt and pepper. | |||||
| Wash and Drain Lentils and soak under water. Add garlic cloves and 10 Tbsp salt to the water. | |||||
| Soak lentils overnight. | |||||
| Prep | |||||
| Cook lentils for 30-40 min until slightly mushy. | |||||
| Drain and pick out garlic. Drizzle with olive oil , add pepper and coat evenly. | |||||
| In a second pan add second cup of oil and garlic ; cook till garlic is brown. | |||||
| Add onion and half the zuccini and cook till well browned. | |||||
| Preheat oven to 475◦ | |||||
| Add remaining zuccini and saute for 5 min. | |||||
| Add bok choy and cover, reduce heat and cook 3-5 min. | |||||
| Remove from heat and season with salt and pepper to taste. | |||||
| Mix lentil and cooked vegetables and transfer to baking trays. | |||||
| Layer mashed potatoes over lentis, bake for 15-20 min. | |||||
